The luminescence technique, considered here, is based upon sensitivity of a combination of fluorescent and phosphorescent parameters to molecular dynamics. The molecular dynamics itself is influenced or even controlled by water content in the objects of interest. An moisture analyzer has been developed on this basis. The analyzer can be used for non destructive determination of moisture of food (meal, flour, starch, dry milk, etc) and of other products (cotton, silk, wool, paper, leather, clothes, etc).
