Hydration of amphiphilic systems leads to swelling of lamellar phases or changes in the polymorphic behaviour. At limited hydration the hydration force dominates the interaction between adjacent layers. Using synchrotron diffraction the dynamic of the hydration of phos- pholipid/surfactant mixed systems is investigated. The phase change between hexagonal and lamellar structures in POPC/ C12En (n=2, 4) is monitored on rapid change of the relative humidity between 30 and 80 %. A mechanism for the found hydration induced phase changed according to nucleation and growth mechanism is developed and compared with the lamellar gel to fluid phase transition of pure POPC on hydrational jump.
