Optical dipole traps operating with laser light very far from resonance constitute a unique environment to study interaction processes between ultracold atoms in the electronic ground state. We explore evaporative cooling of an atomic cesium gas towards a two–dimensional gas and Bose–Einstein condensation, spin–mixtures of fermionic lithium atoms in view of pairing effects, and even mixtures of two different atomic species.
