The principal of self assembly is a promising technique for the production of new materials. Here we investigated the self assembly of colloidal particles at spherical oil-water interfaces using fluorescence microscopy and particle tracking. Micron-sized polymeric particles adsorbed at the surface of a water drop in oil exhibit a long-range attraction in addition to their well known electrostatic repulsion. We measure the interaction potential between the particles, and suggest a new model to explain this effect. The model is quantitatively consistent with the measured interaction potential. A similar system allows the study of the two dimensional crystallization on curved surfaces. We are able to observe the formation of additional dislocations with increasing curvature radius. Applications of these self assembly shell structures for encapsulation proposes will be discussed.
