We shall propose a generalization of the principles of generally covariant quantum field theory which allows for theories over noncommutative space-times. In particular, the fashionable models over the Moyal-deformed Minkowski space-time (with a commuting time variable), repectively the almost-commutative space-time, underlying A. Connes version of gravity and the standard model, are compatible with our axioms.
